I smoked another pork loin for the holiday weekend on the kettle and gave the Mad Hunky Hot Whang rub a try on some wings. Wow! Loved the stuff. Had about 5 friends and neighbors over and the wings were gone super fast and everyone kept saying how yummy and spicy they were. Kinda baffled me though ....I'm usually the weak one that doesn't like too spicy and I thought the wings were perfect.
I also gave GOT14U Mexican Mac 'n Cheese a try in the DO. Really good stuff but next time I think I will melt all the cheese before mixing it together. Here is Jerod's recipe: http://www.smoked-meat.com/forum/showthread.php?t=15006
Here we go - started the MH loin first and let it go about an hour before adding the wings.
Starting the Mac 'n Cheese.
Mixed and ready for baking.
Wings done
Mac 'n cheese done - When this started baking, we ended up going to the other side of our farm so I wasn't around to rotate the DO for even cooking. You can see the one side didn't get as brown but it was still tasty and cheesy gooey. I also forgot the bacon!!
The next morning we had leftover pork loin, scrambled eggs and hash browns. My set up - for the lid, I put the coals right on the grate...didn't think about putting foil down first and I'll probably be cussing myself this weekend when I go to clean it, but oh well...it worked out good!
Gave the loin a little fry on the lid then put them in the DO with the potatoes to keep warm while I scrambled the eggs. Good stuff!!!
Great weekend!!!! Hope everyone enjoyed theirs!! Thanks for viewing!
