  • Lil Chief: Salmon Candy. First try.

    Finally got around to trying a salmon candy recipe. Had to buy a very expensive Chinook (Spring) at the market as my usual source(s) have dried up this year. (I normally buy about 15 fish at once.) At 3 times the price I must be crazy. Anyhow, this was also my first wet brine so I could not be asleep at the switch (not until I get my Bradley this week via Amazon). It sure took along time to pellicle. End result is awesome, but I'm not sharing after the price I paid for 2 sides!

        Nice looking salmon, wow.
        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
        My best asset however is the inspiration from the members on this forum.

            Hmmmm...have done pig candy but never tried salmon candy.

                  Just picked up two 20 pound Spring in Bellingham today. Today was the last day as the season is now closed. They were caught early this morning. Guess I've got another project this weekend. Yehaaa!

                      Broke down and bought an Atlantic Salmon last week, while I'm waiting for the real wild stuff. This was my first farmed fish. Ugh!

                      Made another batch of Indian Candy and it tastes sweet - but not like salmon. That was a waste.

                      Next week we are expecting springs. I've got my hook in the water (so to speak) for 300 pounds. "finger's crossed!"

                        Beware -- the Lil' Chief leads to bigger smokers -- been there & done that!

                        Your Salmon Candy looks awesome -- what was your brine?

                        Picked up a few Silvers this past week for $3/# fresh from the Columbia this past weekend. Headed to Bristol Bay on business next week -- planning on shipping fresh Silvers and Kings back -- the benefits of consulting for a native corporation.

                          I agree, the Lil Chief has led to a few other smokers! LOL. Can't go wrong with fish on it ever.

                          My first attempt at Indian Candy was a wet brine - maple syrup, honey, rock salt and demerara. Glazed JD Honey to finish. Expensive but EXCELLENT - I ate it all myself.

                          Right now real fish is averaging 16 bucks a pound, head off, whole. That's just crazy, which is why I tried that Atlantic , which is/was garbage!

                          Next week I should be able to get (Pacific) Springs for 3 to 4 bucks a pound, caught within hours and filleted to my specs.

                          Fingers crossed - worked last year.

                            Oops, apparently it's Sockeye/Kings - which I'm told are going to be closed here - this side of the 49th. Anyone near BLI area wanting fish next week (ish) - msg me for contact.

                              Damn, that's crazy expensive. Last week we had sockeye fillets on sale for $6.99/lb around here. I agree with you on the Atlantic though. Not much flavor to them.
