Just made some Carmelized cedar planked smoked salmon for dinner. Fresh caught picked up at the store on the way home and rubbed it with lime zest, salt, black pepper, white sugar, and hatch chile powder. Saran wrapped and set in the fridge.
Next, made the cucumber mango salsa with mango, cucumber, jalapeņo, green onions, garlic, lime juice, salt and pepper.
Cooked indirect on the weber OTG blue kettle with apple wood chips for 30 minutes. Came out great! Fresh caught is so muck tastier then farm raised. Worth the extra $. Pron here:
