    I did a batch of jalapeno relish yesterday using Mrs. Gunslinger's recipe and man...this stuff is the bomb! I followed her recipe exactly with one addition...I added four ears of sweet corn to my batch here's how it went.

    Seeded and deveined (for the most part) 4 pounds of jalapenos and ran them through the processor to a fine dice.



    Did the same with a large sweet red bell pepper, 5 onions and four ears of corn and added them



    Then mixed it all up and cooked it for 15 minutes, put it in jars and processed for 10 minutes.




    This stuff really is terrific relish...just the right amount of heat (I'm glad I took the time to take the seeds and membranes out) if it's this good right now, I can't wait to see how it is after a month or two on the shelf.

    My batch mad a 12 8 ounce jars with enough leftover so I threw it in a couple of old pickle jars and took it to the pub for the football game. It disappeared in a hurry!

    Sounds delish, I've just planted some Birdseye and habaneros can't wait till I got some
    Might have to plant some milder varieties to coz these ones are both blow your head off types lol

      That looks great Hoser!! It does get better as it sits!! Mine has only st for a week and it seems that it is better today than last Sunday!! It is great on so many items!! Thanks again Mrs. Gunslinger!!

        Just wanted to update this with a chicken brat that I had last night...smothered in Mrs. Gunnies relish. Just can't say enough about how great this stuff is....if you haven't pulled the trigger and made this yet....what the hell are you waiting for?

              I would make some but 4lbs of jalapenos would cost about $50 (or more)

              If I see some on offer I might make a smaller batch though
              I know someone who grows their own and made soemthing very similiara few years back. It was fantastic stuff.

                5 onions (food processor)
                four ears of corn
                Mix it all up and cooked it for 15 minutes, put it in jars and processed for 10 minutes.

                So is that all that is to the recipe? That seems too simple. I think I will have to give that a try...I already have all my canning stuff out. Did you like the addition of the sweet corn? What if you wanted a little sweet with your heat? Just add a little sugar to the mix?

                  It easy but you left a few things out...
                  A few more ingredients than that... here is the link and a copy and paste...

                  Ingredients

                  4 lbs jalapeño peppers seeded and cored if you must, but a real man would use the whole pepper
                  5 large white onions
                  1 large red bell pepper
                  3 Cups white vinegar
                  1 Cup water
                  3 cups sugar
                  3/4 teaspoon turmeric
                  1 teaspoon dry mustard
                  1 teaspoon celery seed
                  1 teaspoon ground ginger
                  1/4 to 1/2 cup flour

                  Method

                  1-Chop, grate, shred, or grind (we grind) jalapeño peppers, onions, and sweet red pepper.
                  2-Combine sugar, spices, 1/4 cup of the flour, vinegar, and water to large pot. Cook slowly until thick. Add vegetables and cook gently for 10 to 15 minutes. Stir constantly so mixture does not scorch. Adjust thickness to your liking. If to thick and a little water and vinegar. If to thin, add a little flour to water and stir into mixture.
                  3-Ladle into hot sterilized jars leaving 1/2 inch head space.
                  4-Process in boiling water bath for 10 minutes.
                  Makes about 4 quarts

                        Hehe,,,I have a batch cooking now. Not enough japs at the market... got a couple Hunky hots and pabs to make up for them. Man it smells soooo goood!

                          I tried out a variation on about a cup and a half... a quarter cup of diced baby Polish Dill pickles... starts out good. We'll see in a week or so :{)

                              There was vinegar and sugar in the mix as well....you should prolly check out Mrs. Gunny's original recipe. And yes...I thought the corn was a nice touch...gave it a little bit of texture.
