A friend pointed me to this recipe from mrfood.com and it sounded pretty good so I thought I'd give it a try in my 10" deep DO.
Original recipe at http://www.mrfood.com/Beef/Wagon-Tra...Aas12ZifzlY.99
My brisket flat was a little over 4.5 lbs. I used 1 can french onion soup, 1/2 cup BBQ sauce (2 cups sounded too much to me), 1 onion, garlic powder and 1/4 cup water. I cut my brisket and smoked the smaller piece that is on the left on the Weber just in case we didn't like the one done in the DO.
In it goes with a little salt, pepper and garlic powder. Then the sliced onions and then the soup / water / BBQ sauce mixture.
Covered and cooked with about 8 coals on the bottom and started with 17 on top. I let it go for about 2 hours and then started the mashed potatoes in my 10" shallow DO.
Cut up potatoes...kinda like the light coming in through the missing barn boards reflecting in the water.
The brisket about 2 hours in
Boiling the potatoes - my first time at stacking my DOs.
Finished smoked brisket. It had Lawry's seasoned salt and a little rosemary on it.
When the potatoes were done, I moved them to a bowl to finish them up, cleaned out the DO and then it was time for the biscuits. Here they are about half way through baking.
And the finished brisket - cooked about 3 1/2 hours. It was a windy day so I was adding more charcoal about every hour.
Not a good plated pic but the brisket was tender and moist and very good over the mashed potatoes with the juice and onions poured over.
The next day....Little Joe piggy backing on his big brother...just some burgers for lunch.
