Crab Cakes (Low Cal & Low Cost)
I finally decided to try my hand at Crab Cakes, because I love them!!!
I don't usually do this type of thing. I usually just Smoke Meat, or Cure & Smoke Meat.
However since I like Imitation Crab Meat, and it is low in calories, and cheap ($2 per 8 ounce package), I figured I'd give it a try.
I also like these "Tiny Shrimp" from a can. I often sauté a bunch of them for a snack.
I couldn't believe how good this turned out----I'm proud of it !!!!
Here are my ingredients:
Imitation Crab Meat-------------8 ounce package-------------------------200 calories
Tiny Shrimp----------------------4 ounce can (minus juice)--------------100 calories
One Egg--------------------------(Beaten)-----------------------------------70 calories
Melted Butter---------------------1/3 cup-----------------------------------500 calories
Lemon Juice----------------------1 tsp---------------------------------------000 calories
Worcestershire sauce------------1 tsp---------------------------------------000 calorie
Dijon Mustard---------------------1 tsp--------------------------------------000 calories
Baking Powder--------------------1/2 tsp------------------------------------000 calories
Parsley-----------------------------1 TBS (chopped fine)--------------------000 calories
Old Bay seasoning----------------1/2 tsp------------------------------------000 calories
Salt---------------------------------1/2 tsp------------------------------------000 calories
Black Pepper-----------------------1/2----------------------------------------000 calories
Ritz Crackers-----------------------13 (smashed)----------------------------230 calories
Total calories-----1100
500 of those calories are from the butter, so it could be easy to cut the calories down even farther.
Sequence of mixing:
Mix everything but Smashed Crackers & Butter.
Then mix melted Butter.
Then mix Smashed Ritz Crackers.
Form these into any size you want.
I made mine into 4 very large Patties, but they could have easily been made into 6 or even 8 smaller patties.
Place on Buttered baking sheet or foil pan, and bake in 400˚ oven for 30 minutes or until golden, flipping cakes after first 15 minutes.
Note: Smaller Patties would take less time.
