broke in a new kettle w/ some 32oz 2" thick ribeyes & sauteed shrooms.

Big ole ribeyes werk fer me..I just can not bring myself to smoke em though..have to grill on high heat then move to lower when the fat get's brown and bubbly hot. Just salt and cbp fer me.

your new grill is done with her maiden voyage ..smooth sailin fer her from here on out.

OMG!!! 32oz. As much as I LOVE ribeye, I'm not sure I could get throgh one of those. I have a new son-in-law that cold probably tear through one without breaking a sweat, but not me. :canada:

I have been known to smoke a few of them thick ole eyes! Love em that way!

After they smoked to the desired internal. I think it was 138-143, they rested for 15 minutes , tented. Then I filleted them for the guest.

and yes they were fork tender,and huge flavor. I wish I could afford to do them more often. These were supplied by the guests on the condition I would cook them over a wood fire.:bounce:
