  • Triple Rolled Pork/Black Bean Salsa w/ Pics

    Did the chicken wrapped with bacon and andouille the other week. Had some boneless sirloin pork chops on sale. Threw some head country rub on them. Pounded them out, laid some pepper jack cheese down, some andouille sausage, rolled it, wrapped it in bacon. Been wanting some black bean salsa also, so whipped up a batch. Enjoy

            That salsa loog sgood enough for points on its own, but I gotta deal you some pre-points for my imagining what them chicken rolls are gonna look like when done!

                  Thanks to all. Wife said this was my best tasting smoke yet, well close to my brisket she said. Here is the salsa recipe if anyone wants to try it..

                  Black Bean Salsa
                  1 Can (15 oz) black beans, rinsed, drained
                  1 Can (10 oz) Rotel Diced Tomatoes and Green Chiles, drained'
                  1/2 Cup whole kernel corn
                  1/4 Cup Finely Chopped Red Onion
                  1/4 Cup Finely Chopped Cilantro
                  1 TBSP lime juice
                  1/4 TSP Cumin

                  Recipe didn't call for salt, but I added it to taste

                        MMMMM. I'm drooling. Tried the chicken deal last week on the grill. Didn't have time for the smoker. Just some swiss cheese and mushrooms. I've gotta give it a shot in the smoker.

                        I've never gotten the hang of salsa. I know it sounds stupid. Never turns out right. Someone always complains there's too much of something in it. I'll give yours a shot.

                            I think these wraps are catching on. Sometimes don't have all day to sit and do a brisket or butt, couple hours and you have a great meal. I did the chicken, but this pork one was so freaking good. Uncle Honky's new name for the chicken wraps is chatties. Soon it will be going across the web like fatties.
