    Getting some snow today, hope it goes away fast >:( but till it does we will be smoking some eye of round for some jerky.


    Going with this recipe

    Gave them 40 minutes in the reveo






    4 Racks going into Miss Piggy set at 150°F with a load of hickory in the A-MAZE-N-PELLET-SMOKER. Update later

      Looks pretty standard - should be tasty

      Do you think 40mins is enough to get the cure worked throughout the meat ?

      No actual experience of vacumn marinading - so no idea if that's sufficient, just doesn't sound very long

        With cure 1 and the vac... and the time it takes to hit 40F+..he's prolly OK. Altho I'd wait the 24 hours typical. Just becuse I am anal about this stuff.

          Actually cure #1 starts working right away whereas cure #2 works over time.

            Me too - but if it works in 40 mins that's got some pretty good commercial implications I'm definitely interested in

              I have done it before with whole meat jerky in the Reveo vac. for only twenty minutes and the jerky was a nice pink inside which leads me to believe the cure was distributed through out the meat. It never lasts that long around here thats for sure.

                I wouldn't think you would get all the flavor from the spices and soy in 40 min. I don't use vac but always marinate 30-40 hours when doing jerky.

                    Another good point... flavors meld and mellow... and back to the wine..the alcohol helps this process by dissolving some of the essential oils in the spices and making them soluble.

                      Well guys I wasn't a believer of these things till I got mine. Was going to try it out and if I didn't like it I was going to sell it to some other sucker but I am a believer now. They do work. Go buy one off of Todd for a great price. Marinated chicken is very good also.

                        And here we are 10 hours later all done in Miss Piggy @ a steady 150°F

                        Sure don't look like 7lbs. of meat that I started out with


                        A nice cross section of the jerky, here you can see that pink/red meat in the center meaning the cure went all the way through the meat even with just 40 minutes in the reveo. Love that machine


                        Cut up and ready to get brown bagged


                        Into the fridge over night than off to needy people. Dam Kids take all my good stuff

                          Pretty stuff, sir! Yeah...jerky shrinks alot..then just flat out seems to disappear
