Ok, my first attempt at a chuck roast was... let's just say a disaster. Hung up, dry and plain dead. Everything else I've done has come out great, so I figured a failure was par for the course. Everyone has at least one....right?
I'm hungry for a pulled beef sammie, dang it! I started with two 3.5 Lbs. boneless chuck roasts. Splashed on some worcestershire sauce and coated with Blazin' Blends, Kansas city steak seasoning. (Got a little zing to it) Filled a drip pan with sweet vadalia onions and a little worcestershire and beef boullion. Using oak this time.
Got it going about 7 this evening. Will be a late night. Hoping it's worth it. Cruising along at 235. The plan is to bring it to the 190's and plop it into the drip pan for a rest. See if that helps this time. Keep you posted.
