Just finished slicing up about 25# of Bambi meat for jerky. Sitting in the brine for Friday and Saturday smoking. No boring preliminary pics. Will do some when I get to racking it up and going into the smoker. Oh yeah, some finished product pics too.

OK here are the pics of 14# of bambi out of the brine (24 hrs in), all laid out on the racks getting ready for some smoke.
I make the brine up by the gallons.
1 Gal soy sauce
1 Gal water
1 Cup brown sugar
2/3 Cup Tenderquick
3 Tbs ea of garlic powder, black pepper and onion powder.
Use as much as needed to cover meat.
And here we are in the smoker for about 4 hours of oak and apple @ 140 and then another 4 @ 175.
