  • Decided to iChat to make some bread

    Made a good versatile basic bread recipie then couldn't decide what to make.
    Ended up making a stuffed focaccia .
    Stuffed it with grated parmisan , tasty cheddar, motzerella , spinach fresh out of my garden, sliced proscutio and feta .

              Yep, That looks pretty good. I am about to get into bread making in a big way. Only way I can have burgers, sausage, etc is to make my own from gluten free flour. It is mostly buckwheat so it needs all the help it can get This looks to be a good way to add some flavor.

                The recipie I used should work with gluten free flour too I recon, can use it with slight variations to make practically anything

                  Iam going to make some plain loaves to get a feel for it then go from there. Firmer breads like focaccia might be a no go. Hope not.

                    Here's the basic recipie for the basic bread mix

                    1kg strong flour
                    2 tbl spoons salt
                    Mix together

                    3 8grm packets of dry yeast
                    2 tbl spoons sugar
                    750 ml/ pint of tepid water
                    Mix together and rest till foaming

                    Mix wet and dry ingredients , May require a bit more flour.
                    i used my magi mix. Them knead until smooth and elastic, cover with cling film in a large bowl until doubled in size.

                    Takes 30 to 45 mins aprox .
                    Then knock the air out and give a quick knead and shape or roll til desired shape. Here I rolled it out double the size of my roasting pan, laid half in the bottom added the filling then folded the top over and tucked it in.
                    Rest again until doubled in size again then bake at 180c for 25 mins aprox, rest for 20 mins before serving.

                    Makes good loaves and rolls too or calzone casings

                      That looks great Dale!
                      Personally i think you're a bit of a maniac for doing a stuffed focaccia with parm, mozz, cheddar and feta but when mixed with the bread and the spinach and proscuitto I'm sure it was amazing, and I'm suer there was some garlic added to the party along the way

                        Lol Ty jimmy didn't taste half bad, wAs using up some cheese dregs in the fridge btw... A nd cheese is like bacon , no such thing as to much
