  • New toy A-Maze-N tube smoker

    Just got my new tube smoker from A-Maze-N and doing a test run with it today.
    I'm smoking some string cheese, philly cream cheese and salt.
    Pit temp. at the start was 52 degrees and an hour into the smoke the temp. is at 59 degrees. So far the tube smoker makes huge amount of heavy dense smoke. The smoke is more white then the thin blue.

    You can just turn on the Yoder's fan and not turn on the start switch for just the fan to run. This will provide more oxygen for the burn and air circulation inside the cook chamber. Just something I thought I would mention that you can play with and see what cold smoking method you prefer with the Yoder.

      when I cold smoke I only fill half way full and let it go... burs better and not so heavy... this is what Todd recommended when we were first playing with the new design.. I found this worked well!

        Mossy thanks for the suggestion. I gave it a try and when the fan kicked on there was a rush of smoke pouring out of the stack and around the door. It was the funniest thing to see, wish I had a video. lol I turned the fan off it just blew all the smoke out.
        hey Bark I'll try half full next time to see what happens.
        I got the 18" tube and wanted to see what kind of burn time I get cold smoking. I'm at 3 1/2 hours and the tube is burned down to the last 3 inches so looks like a 4 hour burn on the 18" tube. I'm using BBQr's delight apple pellets.
        The smoke smells more like a camp fire which I didn't expect.

          Yeah I hear on that!! That is what Todd and I thought... my cheese tasted the same way.... a hunk of Fresh Mozz. in the can... Hey live and learn! You will be much happier with the 1/2 full run... but it will not go as long...

            lol, bark that's funny. My whole thing with the tube is that I hope to get more smoke color to the food on the pellet grill and a touch more smoke flavor. I plan on using the tube for the turkeys on the YS-640 for Thanksgiving. Like you said live and learn, so I'm going for it, whatever the out come will be. If it doesn't turnout. . . well, it will be something to laugh about years to come. lol

              The smoked salt turnout nice with a light golden color to it and smell like a camp fire, lol. Cheese is resting for a few days will try it then, but it looked nice with a yellow tint to it.
              Cleanup of the smoker I found that the tube smoker left a streak of creosote across the lid right above the tube smoker. It was a tacky,shiny patch that was tough as candy apple coating. I put the torch to it to loosen it up, when I put my scraper to it, it came off right along with the paint on the lid .
              Maybe this tube smoker will be better while the cooker is running to move the smoke around the food and out the stack.
              I'll be re-seasoning the lid tomorrow.

                My bet is yes. That thing makes alot of smoke, and it's dense. Keep it moving, and I'll wager your color and level of flavor will improve.

                        In my opinion, in the future I would just leave that creosote coating on the interior of the smoker and make your goal after many cooks is to line the interior with that coating; then you have a fully seasoned smoker!

                            The question would be how much does it cost to ship a 500 pound pallet from Kansas to Australia, and then to you? I am sure that there are profit margins also involved which raise the price somewhat, and the currency conversion, import/export tax, etc.
