Don't know what it is...but I'll smoke it.

Wife bought it & said it reminder her of me...A royal pain in the rump.

Rubbed her down with brown sugar, CBP, K-Salt, Garlic, Red Pepper, and Cayenne. Spritzed with Grape/Cranberry/Jim Beam (I was out of Apple Juice)

    1/2 way home...Sitting at 110*

Sauteing some zucchini and squash in liquid gold... Yum!!!!

    Done!!!!

Plated with the Z&S, Cheesy Tx potatoes, and a crescent roll..

    Thanks for viewing!!!!

I'm with Keith, horseradish for sure.
That chunk of meat turned out a lot juicier than I thought it would. Very nice.

looking good..........local grocery store has em on sale for 1.99/lb.........gonna get a big one for the gathering......mairnade it in my JD marinade for 2 days.......(no vinegar, so i don't have to worry about it getting mushy), smoke it at the gathering to 135, and slice deli thin for sandwiches.........great piece of meat.........
