I love biscuits. These are made to be the size of a cat's head. I've worked for years to get a recipe. I'm finally happy that I can make a decent batch.

Phenomonal. I wish I had the patience to do them like that. I'm frequently making drop biscuits due to how quickly I can do it. They are like hard tac, but they are the perfect backdrop to a nice sausage gravy. Yum.

Herez ya one of my favorite treats to go with some
good biskins
Wash and core about 5 golden delicious apples and cut
lengthwise into wedges.
In a sauce pan stew these in some apple juice and
just a little butter & white sugar, (not much)
Now mix up some corn starch 1 Tb in 1/4 C water
Add about 3/4 C dark brown sugar into the apples
1/2 tsp nutmeg, 3/4 tsp cinnamon, 2 Tb butter,
and heat till bubbling.
Now add in a generous shot of Bourbon Whiskey and stir
Now stir in some of the well mixed corn starch and stir
little by little till the sauce is thickened up. You may not
need all the corn starch mixture.
You can use a can of Lucks Fried apples if you throttle back
on the amount of the ingredients. Just pour the juice in the
pot and heat it and start from there.
When I see a bag of White Lilly flour in a store again, I'm going to get it
and make some of these. I'll pick up some butter milk. (and of course some fresh baking powder)
I'm not sure if they are comparable. Here's the recipe I use if you'd like to try it or if it sounds similar.
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon white sugar
1/3 cup shortening
1 cup milk
preheat oven 425F
in a bowl whisk together all dry ingredients.
cut in the shortening
add milk and mix completely.
grease up cast iron pan with some shortening.
I use a small amount of flour and basically form the bisuits by hand.
Don't work it too much as it will make them hard as a rock.
put them in the oven.
when they are about 3/4% cooked place a teaspoon of butter on top of each biscuit. I use good Irish butter so that's why I don't use as much salt in the batter.
It's pretty easy once you get the hang of it. It took me a couple of weeks before I made a decent batch.
