  • Raspberry Pie

    I was thinking over the weekend about a dessert that would be really good during our hot summer months. Something cool and refreshing.. I came up with this.. It does taste a little like Raspberry Cheese Cake, but Much lighter.. The greatness of this recipe is you can plug in any of your favorite fruits.. Blackberry, Blueberry, Strawberry... you name it..

    I love the simplicity of this...


    1 Graham Cracker Pie Shell
    1 8oz. Cream Cheese 1/3 Less Fat
    1 8oz. Cool Whip Lite
    1/2 Cup Sugar
    1 8-10oz. Bag of Raspberries ( Fresh Is Best )






    Blend cream cheese and sugar till smooth.. Add whip topping and mix well.. Take 2/3 of the fruit and blend in..

    Smooth top and add last 1/3 of fruit.. Freeze for 4-5 hours or overnight..

    I know its hard to see but the filling turned a really nice reddish/pink..




    Slice and enjoy a really cool dessert on a hot summer day...

    That looks good man.
    Might have to try that when we get some wild ones. Or maybe even black berries.

      Oh my..I LOVE raspberries! I never got to the pie shell stage...I just dump some half and half and a bit of sugar over them and chow. Hmmm this is MUCH more respectable! Thanks Ken!

        It does look real good and easy too!. And I have been making that peanut butter pie since you first posted it many moon come chocktaw and love that recipe. So I will be making this one as well. Thanks Boss.

            dunno about the pre-whipped stuff, but I can see this working just as well with whipped cream instead :-)

                  You have patience, only pic I could have got of that pie would have been cream and razzberry all over my face and snourtin out my nose..

                      lol we just don't have tubs of whipped cream substitute in the shops :-) Not a question of laziness we HAVE to make our own :-)
