          Looks good...what was your impression of the smoke flavor? Did it add to the dish? would you recommend it? Will you be doing it again? Did the family enjoy it? We gotta know!

            I was a bit nervous about the smoke from the start. After all, we are in unexplored territory here. Who knows how much smoke apples might absorb? I decided to go conservative with my first attempt at this and did not add any additional woods opting instead to let a mix of Royal Oak and Wicked Good provide the heat and the smoke. WGC is relatively neutral but RO, to me, provides a distinctive flavor. I also let the fire burn for 1 full hour to minimize smoke flavoring.

            It turned out extremely well. Excellent, in fact. Subtle background notes. Nuanced would be a fair description. Not unlike how a small amount of anchovy adds depth and character to some Italian dishes. I don't believe I would carry the smoke to much further than this. Perhaps a little bit.

            Would I do it again?

            Hell yeah!!!

            And next time maybe add a bit (and I mean a bit) of apple and/or cherry wood to the fire

                  X2, that's what I was thinking would be the best route meself.... And letting the charcoal burn down I'm thinking was an excellent idea..... Nice work my man, tried to give ya butt they got me handcuffed for now .... Maybe somebody can pick me up

                            I went with Rome apples for this one.

                            It's important to know I'm cooking on a ceramic as methods usually differ.

                            Placed the crisp in enameled cast iron on the grill, indirect, with dome temp running 375 degrees. After 45 min, the crisp wasn't looking as I felt it should after this length of time so I cranked her up to 450 and raised the crisp to the upper racks, closer to the heated dome to brown and complete.
