View Full Version : How long do snack sticks take to dry out

You know, till they like snap in half.

Here's the problem. I make 5 pounds of these terrific venison sticks. Best I ever made(ok only 2nd attempt), I put them up in the pantry in a colander so the air can get to them. So today I go to check on them and not only are they not dry yet, they are almost gone. Is there a faster way to dry them out before they get munched?

Have you tried taking a few of them and put them in a dehydrator for a few hours?

Always dry mine in the smoker.
Are you sure they're not dry, and what you perceive as moist is just the fat and oil from the pork. I assume you used pork.:noidea:

I used 25 percent back fat and smoked to 152. Also used 19mm collagen casings. I guess I wanted them a little stiffer. Dehydrator might work.

The last several runs I made were 70/30 venison/pork and they turned out more like little summer sausages. I smoked them to 152 they did not turn out stiff, they were mighty tasty. The way yours looked I bet they will not last long.
