    smoking cheese, just a trial run with the AMNPS smoking some string cheese for a few hrs with the oak and it wasn't bad at all,

    trying it again tonight and i was wanting alittle hickory so ive got a bag of hickory chips and im cutting them down even more into thin slivers and alternating the layers, pellet, hickory,pellet, hickory, hoping that the pellets will burn it too.

    to REALLY appreciate it.. vac pack or plastic wrap tight for 2 weeks THEN try it.

      when i get the hang of this and find the flavors that i like ill get some bricks of cheese and do that, the ones i did last night i ate right away and it had a mild flavor,
      just went out to check the cheese and the pellets are burning the hickory too so its working. now to see if i can get a 50/50 ratio or better with the hickory.

        Sometimes depending on the cheese..light smoke is the right smoke. A HD cheddar can take more than say a gouda.

          the lighter smoke i didnt put very much pellets and maby 3 inches long it was barely enough for 2 hrs of smoke,

          oh and BBQ island where i got this AMNPS from replied back to me after i let them know that they sent the wrong 20lb bag of pellets, by all rights they should send me what i had ordered (a 20lb bag of hickory) but no there sending seasonings and a small package of the hickory, if it were me id send the package and bite the bullet and make the order right if it were my mistake just for the PR reason, and i had to bribe them with a sad face just to get that from them.

            ive read that a few times too, harder cheese takes longer and softer cheese less time smoking.
