After the recent resounding success of the pulled shoulder ham, I wanted to take another run at it- but on the spicy side. This butt was cured with Tenderquick for 14 days in a garlic, onion and ancho chili <THANKS Kyote!> brine. 3 days ago, I removed it from the brine and coated with Sezged Hungarian HOT paprika and maple syurp, then wrapped up tight and set into the fridge. Just broke it out for smoking over apple and hickory. Will update!

All pulled for sammies. Party is the 20th, so Vac'd and frozen for a week. Which I STILL think improves pulled meat...seems the flavor melds much better than right outta the smoker. Looks really good Rich. I'm not into sweet meat myself either but for a crowd pleaser your sure to have a hit on your hands with this. Looking forward to the finished pics.
