  • A Schweet an' Schpicy butt ham

    After the recent resounding success of the pulled shoulder ham, I wanted to take another run at it- but on the spicy side. This butt was cured with Tenderquick for 14 days in a garlic, onion and ancho chili <THANKS Kyote!> brine. 3 days ago, I removed it from the brine and coated with Sezged Hungarian HOT paprika and maple syurp, then wrapped up tight and set into the fridge. Just broke it out for smoking over apple and hickory. Will update!

    dang rich, sounds like its gonna be great, lookin good already as well. gonna have to keep an eye on this one. maple syrup??? thats a lil unlike you isnt it, goin to the sweet side??? dont worry i bet its gonna be exlent

        VERY unlike me. But... I have the dau's grad party coming up, and I thought a pot of this would be welcomed as an alt to the burgers and chicken the wife mandated to be cooked. Plus, I really do not mind a BIT of sweet... I just want it balanced.

        Mop is 1/3's
        Cider Vinegar
        Bourbon
        Maple syrup
        more of the Hunky HOT paprika
        some of the ground Ancho pepper

        Man it smells great :{) Just flipped it and mopped. I can smell the paprika MMM!

                  All pulled for sammies. Party is the 20th, so Vac'd and frozen for a week. Which I STILL think improves pulled meat...seems the flavor melds much better than right outta the smoker. Well....I WILL have a sampling of course ;{)

                      Looks really good Rich. I'm not into sweet meat myself either but for a crowd pleaser your sure to have a hit on your hands with this. Looking forward to the finished pics.

                      Is a butt ham about the same thing as others call buckboard bacon?

                        Yeah..gotta be. Cured butt/shoulder. The last one I did I sliced the boneless portion and vac'd it, took it up to the guys golf outing and fried it up for a couple breakfasts... was excellent. The bone in went immediatly back into an oven to pull temps...what a sammy!

                              The ole WSM... no waterpan...use a grill at the bottom covered with foil to re-direct the heat.
