  • Jalapeno jerky

    Had some beef tenderloin ends laying around. I wanted to make jalapeno jerky. So this is the recipe I came up with for 2 1/2 LBS. of meat. Sliced 1/4in. thick put in the marinate for 24hrs.

    1/4C Soy sauce
    1/4C Worc.... L/Perrins
    1/4C honey
    1/4C maple syrup
    6TBS. lemon juice
    1/4C jalapenos (seeded)(chopped)
    2TBS. fresh garlic
    1tea. salt
    1tea. pepper
    1/2tea pink cure

    Smoked with apple wood.

    Jerky turned out great. I'll have to make more, I see it aint going to last long. Oops, I see I put lime juice in the picture, I used lemon just forgot to snap a other picture.

              Yeah, those bits look really nice. How was the heat? Looks pretty spicy!

                The heat aint bad. U get a the flavor of the jalapenos then the heat.

                      great looking jerky! Jerky doesn't last long here either, I wish it lasted as long as it takes to make it.
