  • What to do, what to do...

    My wife sent me to the local butcher to get some german sausage. She shoulda known better. Came home with the GS alright but also got a beauty of a pork loin. They cut it to about three lbs for me and now I gotta figure what to do with it.
    Im open to sugestions here as long as its not the one with saurcraut.

    Me thinks a Stuffed Loin is in order for the weekend... Heres one I did a few months back.. Maybe this will give you a few ideas... And NO sauerkraut either...

      Stuff it. Fillet it out flat, and stuff it! I have used a layer of baby spinach leaves, A bread stuffing mix, chopped onion and celery. Or the spinach leaves, diced tomato, a clove of chopped garlic, asparagus, breadcrumbs and fresh grated parm cheese.

      Or, whatever you think will be good ;{)

            Ive smoked a loin before where I brined it. I take that wont be necessary if im stuffin. Hmmm...

                  I see everyone else has veggies in mind too. Was going to suggest some spinach and I was beat to it.

                  I haven't smoked a stuffed one yet. I've done it several times on the grill. My favorite is spinach, mushrooms, onions and minced garlic. Served it with a little hollandaise sauce. MMMM.

                  Oh I forgot, Some shredded parmeson isn't bad in it either.
