This is one of my favorite salads. Really easy to make.
I start with about 1 cup of cactus, cooked and cut into strips.
You can use canned, just rinse and drain.

You can add any veggies you like...I use corn, minced onion, black beans, tomatoes. and diced jicama.

I mix my dressing ...
1/3 cup red wine vinegar
2/3 cup light oil
1 TBS dijon mustard
salt, pepper, onion powder and garlic powder to taste.
You can use minced garlic instead of powdered.

Mix dressing with the salad and chill.....
It's easy and you can use any veggies you like. :)

lol Deud, ya gotta be tough out here. We eat lots of cactus and beans. :D

I'll have to look hard to get some cactus up here but dang girl, the brother LOVES those caviar type dishes.

Looks pretty good. I'd give it a shot if I could find cactus up here. Maybe I'll have to try one of the mexican markets.
