Was a just under 4 pound boned shoulder and went about 10 hours, went light on the smoke just some native sheoak and hickory as its one of the girls birthday and she isn't a big smoke fan

Mary had a little lamb her father shot it dead, now it goes to school with her between two lumps of bread

Thanks Alex and crew.... Yea it's a fatty cut but the fats in layers through it, probably similar to pork neck , it looses almost all of its fat low and slow and turns out super moist and kindy sticky and succulent , I love lamb leg and loin chops and racks but a slow cooked shoulders bloody hard to beat

Oh that looks wonderful! Do yo use BBQ sauce or what on that? vinegar, mint? or just eat it plain? What sides does one serve with that?

Thanks mate, I used a small amount of SBR and a lil bit of vinigar with the liquid gold and served it with home made potato salad and bread roll.
                  Was pretty yum
