  • Cherry Amaretto Roast Beef

    I have been wanting to do another roast beef that I could slice thin for sandwiches. I did basically the same as last time but kicked it up a little bit.

    My mop ingredients. Cherry juice and Disaronno


    I poured Disaronno over the roast and lightly coated with a little bit of rub.


    Sprayed with a blend of cherry juice and amaretto after about an hour then about every 30-40 minutes until it hit an internal temp of about 140.


    It is chilling out in the fridge now and I will feed it to the meat slicer tomorrow night. I will update with a sliced pic then

    Interesting. Bet that smelled fantastic while smoking. Can't wait to see the finished pics and your take on the taste.

        After slicing it all up I guess I got a little careless when cleaning the meat slicer and got a small cut on the tip of a finger......

        But bacon makes everything better

          Roast beast done to perfection... the color, the texture, perfect! YUMMY!
          Opps with your boo boo, but I gotta hand it to you, I LMAO when I saw the bandaid! I had no idea those were actual bandaids... lol!

                I just realized I didn't include my thoughts on the taste. The very first couple of slices that came off that were of the exterior surface of the meat did have the cherry/amaretto flavor. The other slices were regular tender smokey roast beef. It is definately good and I would not mind doing it this way again. Maybe next time try injecting?
