  • Strawberries and Cream Pie

    My sister found this recipe and asked me to make her one...she hasn't been feeling well lately...so how could I say no? Ended up making 2 for the family Sunday night dinner at our parents. There were no leftovers. Very good pie that would be even better on a hot spring / summer day.


    My pies



    Here is the easy original recipe. I couldn't find any Oreo pie crust so I used chocolate Graham cracker crust and I believe it to be just as good. I also did not have time to refrigerate overnight or the hour before serving. I put them in the freezer for about 40 minutes, drizzled chocolate over the top of the cream mixture, topped with the strawberries and more drizzled chocolate and then traveled 30 minutes with them...they set up and served just fine.


    Strawberries and Cream Pie

    1 cup semi-sweet chocolate chips
    3 tsp shortening
    1 Oreo pie crust (I have also used a graham cracker crust and both options are fabulous)
    1 8-oz block cream cheese, softened
    1/2 cup sugar
    1/2 cup sour cream
    1 tsp vanilla
    1 tub Cool Whip (8 oz)
    2 cups fresh strawberries, halved

    Combine chocolate chips and shortening and melt in the microwave or double broiler. Stir until well combined and then pour about 3/4 of the mixture into the bottom of the crust and refrigerate until firm.

    Beat the cream cheese, sugar, sour cream and vanilla until smooth. Fold in the Cool Whip. Pour (or scoop) the mixture into the crust and refrigerate overnight.

    Arrange the strawberries on top of the pie. Microwave the remaining chocolate and drizzle over the top. Refrigerate again for about an hour before serving. You can also add the strawberries and chocolate before refrigerating overnight - that works great too!

    That does sound really good! Will have to give that a shot in a few weeks once berries start to come to season here!

        I used to have strawberry cream pie for my birthday when my pops was still alive but now just regular cake might have to make myself one got loads of frozen strawberry's in the freezer

                  Thanks, Everyone! Yeah, I can't wait to make one again with fresh berries. I'm thinking a few blueberries sprinkled on top between the strawberries would be pretty good, too.
