  • Tarheels Chicken Butt

    I finally took the time from all the Work, Sickness, etc. and fired up the smoker. Friday I got the the meat and rubbed it down and but it in the frige for overnight.


    Saturday morning I got the silver bullet hot and put it on.

    In about three hours the chicken was ready and it came off the smoker.

    I let the butt cook for awhile and wrapped some tater in foil and cut up some home grown squash and cut up some onion in them. After it cooked a few hours I put the tater and squash on.



    When the internal temp got to 205 I turned it off. The juice from the but had dripped down into the squash and added a good taste to them. Everything worked out great. The butt, taters and squash were done at the same time.

    Interesting title! Heh... looks like another fine batch of Q, even if it wasn't a batch of chicken butts lined up in there...LOL!

          Really nice chicken butts! The homegrown squash looks yummy too!
          When you cooking veggies under for the drippings, are you mopping too?

            Sprayed it down often with apple juice and rum. It was soooooo good.

              So when you plan your veggies, do you take your mop into consideration? Cuz that is dripping down too in the veggies right?
              Or do you mop around when the veggies go in and come out?

                  I kinda planned it so the butt juice and the mop/spray would fall down into the squash. Usin southern folk flavor our veggies with what we call fatback, or smoked/cured ham etc. I knew the dripping would enhance the squash and onions and it did to. All I used was the apple juice and rum.

                    Looks great, super juicy. I am surprised you were able to slice it after taking it to 205 internal. I figured it would fall apart on you. The veggies sound good too.
