  • Pretty good for Yankee if I do say so myself.

Haven't been smoking a lot lately. My father took a tumble around Xmas he broke his arm and his leg and spent the last 6 weeks in a rehab facility. I've been going back and forth between our 2 cities. He was released to his home recently and I went down to help out. When I got to his home I got my list of chores from him, and the supreme leader my older sister. Most of it was fairly innocuous. That said I did have to fill the freezer with some meals so the old fart wouldn't starve or have to eat just sandwiches. I asked him what he wanted and he said Jambalaya. So I got to work. He wanted sausage seafood Jambalaya so that's what I made. I made a lot and it is a pretty standard recipe...
    2 cups white rice
    4 cups chicken stock
1 lb mixed frozen seafood medley from Trader Joe's contains Shrimp scallops, and squid.
    2 cans diced tomatoes
    2 onions
    2 bell peppers I used 1/2 a red, 1/2 a yellow, and a green
2 jalapeno(didn't have celery so I need a third for the Holy trinity)
    MH Salt free
    4 smoked andouille sausages.
    6 cloves chopped garlic.
Most of you know how to make it so I just listed the ingredients. Here are some pics. Apparently I used Rich's camera.

What is so nice is this is like a payback for me. My father is the one who did most of the cooking growing up. He taught to explore food, and where it comes from, and even the traditions behind it. I remember the dinner parties he would throw for our family, relatives, and friends. He taught me that food is fellowship and can bring people together even in tough times. It really is the least I can do.
