  • teriyaki beef jerky

    at the request of my grandson, i was convinced to make some jerky this weekend. he wanted some teriyaki beef so i looked for a recipe and found one on the web. the original recipe is from By Peggy Trowbridge Filippone.

    since i have been hanging around here i have came to believe that you should never use a dehydrator on not add a cure. cure #1 has been added to the original recipe.

    i also dusted some a layer on the dehydrator with mad hunky gp.

    here is the modified recipe

    1 Tablespoon brown sugar
    1-1/2 teaspoons kosher salt
    1 teaspoon onion powder
    1/2 teaspoon garlic powder
    1/4 teaspoon CBP
    3/4 teaspoon Cure #1
    2/3 cup teriyaki marinade
    1/2 cup of no-pulp orange juice
    1/4 cup of water
    1 Tablespoon honey
    1 teaspoon soy sauce
    1 teaspoon liquid smoke

    i poured this mixture over 2 lbs 10 oz of sliced eye of round in a one gallon zip lock bag and tossed it in the fridge for 12 hours. i did kneed the bag every now and again for good measure.

    loaded the dehydrator








    after 10 hours I ended up with 1 lb 2 oz jerky. the mad hunky gp coated in the little pile.


    overall, its not bad, a little sweet for my taste. the mad hunky gp is almost there.

    that said, my grandson says it the best he ever had thats all i needed to hear

              Looks great Marcus, have yet to do it but will after this post.
              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
              My best asset however is the inspiration from the members on this forum.
