  • Famous Daves FIRE n ICE Cukes n Onions

    Got this in a general email so WTF?
    WHy not put it up for what it's worth.

    2 Med Cukes
    1 Med White Onion
    1 C Sugar
    1 C Vinegar
    1 C Water
    1/4 tsp Black Pepper
    1/4 tsp Red Pepper Flakes
    1/4 tsp Celery Seeds
    1/4 tsp Cayenne Pepper
    1 tsp SALT

    Slice Cukes and Onion on a French Mandolin with the grate or waffle cut
    1/8th Inch thick, Place in a bowl. Mix the rest making sure the sugar is dissolved. Pour over Cucumbers and Onion. Seperate Onion and toss w Cukes in Sauce to thouroughly mix with the sauce. Refrigerate overnight.
    To serve, drain and reserve marinade, which can be used again.
    Yield 4-6 Servings.

    Oh, and FWIW, I've had his FIre n Ice Pickles, don't recall if they're Dills or not but they're TOO Sweet for me and I'd cut down on the sugar.

    sounds great. I do the same but just vinegar.will give it a shot one day. as I like every thing in the recipe.

      That's the beauty of recipes Kyote!
      Just know your own palate and adjust to your liking.

      Some recipes I look at and KNOW they're not for me.
      Others, I look at and KNOW they're gonna be fantastic.
      Others, I know I'll have to make a few tweeks but a recipe is just that. A GUIDE!
      So tweek away.

      Out of respect, I 99.26574% of the time follow the recipe VERBATUM the first time.
      Then I take notes and tweek, unless I have a very strong feeling. Just me but that's the way I am and things are workin that way.

          Nice. A variation of the fridge pickle my mom made. Some cider vinegar, sugar, S & P, onions and cukes. Still tart, not like a sweet pickle. Make them every summer with the cukes from the garden. May have to give this a shot.

                i dont know if hunky would be the word, have german and polish decendants and make a cucumbers and cream also with vinegar and salt. great served over lil new potatos!!!
