  • Seafood Chowder

    Winged this one tonight & turned out Great! ..... Basic chowder recipe to start, cook bacon until firm (think 5 more minutes would have been perfect) then add diced onions & celery..... season (S&P) & cook until onions & celery are translucent & tender..... add water & potatoes & cook 10 minutes, then add fish/shellfish in the order of time needed to cook..... Simmer until fish/shellfish just aboot cooked..... Add a cube of butter, a little milk, S&P again & pull off heat & let rest 10 minutes+-, then serve.

    We really prefer a light broiled garlic cheese bread over a thick crusty bread for stuff like this, as most of the time I burn my mouth taste testing & adjusting seasoning & the crusty bread is then much like sandpaper

    Ingredients

    - Bacon (1 pound)
    - Onion (White, 1 large)
    - Celery (8 stalks)
    - Water (6 Cups, add as needed to cover)
    - Potatoes (8 medium)
    - Halibut (1 pound)
    - Tilapia (1/2 pound)
    - Shrimp (1 pound)
    - Razor Clams (3/4 pound)
    - Crab (previously cooked & cooled, aboot 1/2-3/4 pound)
    - Milk (3/4 cup+-)
    - Butter (1 cube)

            Dang Scott, That made me hungry just reading the ingredients.... And the pics gave me an urge to eat even though I ate pretty good meself tonight, made some more orange chicken.

            This is one thing I haven't seen from you in a bit, not sure if an off the cuff recipe or something you have been making for some time. But is a great example of something that i am gonna so steal from you. Dont think i get into any razor clams here though. Thanks for sharing man!

              *E* ..... Just based on a simple Razor Clam chowder thing been doing for a lot of years..... Really basic & change it up & use chicken breasts, smoked salmon, etc.... I & the family just personally don't like a really heavy evaporated milk/cream base, so just add a little milk for color... The liquid tastes more like seafood broth than a milkshake and typically add almost double the seafood & cut down on the broth, so it's really more like a thick seafood stew.... More Goodies!
