After reading PreacherRodgers post in the cook off forum.. I really wanted to give him something a bit different.. So I came up with this...
Some of the players for this evenings entertainment..
A real nice strip steak, chilpotle sauce, onion, and some french bread...
Add your rub to your beef or marinade...
While your steak is getting warm and fuzzy... Time to make the sauce..
Items you will need.....
1/3 Cup sour cream
3 TBS. mayonnaise (Not MW)
2 TBS. freshly squeezed lime juice
1 TBS. canned chipotle chiles in adobo (about 1 chile) or 2 TBS of canned sauce
1 Large clove garlic
1/2 tsp. chili powder
Directions:
Combine all the chipotle sauce ingredients in a blender or small food processor and process until smooth. The sauce will thicken slightly as it stands....
Taste test.. If you would like more heat add more chipotle sauce..
Stick in frig till ready to serve..
Now time for the caramelized onions... This can and should be done on the grill in foil or a small pot you dont mind having over coals...
1/2 stick of butter, and a Tsp. of sweet basil..
Cooked about half way down..
While the onions and sauce are resting.... drop your steak on the grill, be sure to put it across from the mail heat source... Add your wood if you want it smoked...
Be sure to keep a eye on the temp of the meat... smoke it till it gets to 120*..
Once you get to the 120* range .. hit it on the coals... sear it till it hits 145*... You can see the fat burning off where it was warming...
Once it get to temp.. Pull and foil for 15 minutes..
As you are waiting for it to rest... drop your slices of bread on the grill... Toast them real good on one side...
Slice your meat and get ready to make your open faced sammies...
Add a THIN sliced layer of steak, then onions (Make sure they are hot) and then top with some Chipotle Sauce.. You can add the sauce cold... I like it hot... Pop in the Nuke for a fast reheat if needed... Or drop back on the grill...
