  • Couple of Whole Yard Birds

    I did these mainly for two reasons. First, I got a great deal on the birds, little over $6 for a 10lbs+ of yard bird. The other reason is that I wanted to try out a new toy for the smoker, a DigiQ II. Man, I am sold and it is awesome for my uses.



    I marinaded the birds in Mojo for 24 hours and then injected them right before the smoke as well. I also put on an oranger based rub I use on fish quite abit as it goes well with Mojo.



    I do these beer can style. I also put Mojo in the pan and plugged them up with Jalapenos. Lastly, I put the innards in the pan to smoke as they are a favorite for the dogs at dinner time.

    I set the DigiQ for 325 using applewood and let her go. After getting through the danger zone, I backed it off to 300 degrees. Worked like a charm and was thrilled. After roughly 3 hours, the birds hit 175 and were foiled and into the cooler for an hour.



    I pulled all the meat and seperated by white, dark and for the dogs.



    Lastly, got a great pan full of broth which mingled in the Mojo during the smoke. That went into the fridge for seperation.

    So, everyone was happy. The dogs got some good vittles, the Mrs. has vacum packed leftovers, and my new toy worked great.

          thats awesome, I like the yard byrd heads.lol.
          and as for the dawgs..mine will not stop following me now that I grill and smoke a lot..they are my offical testers.so far they love everything out of my hands.lol.
          as for the Mojo juice. I never have been able to warm up to it for some reason. and I have used it often. may be if I cut it with some sort of top shelf stuff.

            Thanks everyone.

            Kyote, I have never been able to find any even decent Mojo in these parts so I found a recipe and have been making my own ever since.

            Give this a shot and make any changes to suit your taste:

            8 cloves garlic, minced or just get the stuff in tube
            3 tablespoons of Lemon Juice
            1/4 cup of Lime Juice
            1 cup of Orange Juice
            4 bay leaves
            2 teaspoons of dried oregano
            1 teaspoon red pepper flakes like you put on pizza
            1 tablespoon of soy sauce
            2 teaspoons of brown sugar
            1/4 cup olive oil.

            Lastly, I added one chopped/minced jalapeno.

                I will most truly give this a shot. every thing in it sounds great to me.
                I'll bump it up with a liilte nigerian. those are awesome. when she heads back. I am giving her money to bring em back whole and smoked.

                    Great yard birds! YUM! and I love the idea for the dawgs, you are a good man! Thank you for the mojo recipe too, I have been looking for a good one, im going to give this a try at the first available moment! beautilicious smoke!

                          As for the compliments and points from everyone, thanks, I appreciate it!

                          P.S. I do love my dogs, they are family and are treated as such, so, they share in the feast. Heck, they're the only ones who will tend the smoker with me the whole time, LOL. So, I guess, they deserve some of the fixins.
