I did these mainly for two reasons. First, I got a great deal on the birds, little over $6 for a 10lbs+ of yard bird. The other reason is that I wanted to try out a new toy for the smoker, a DigiQ II. Man, I am sold and it is awesome for my uses.
I marinaded the birds in Mojo for 24 hours and then injected them right before the smoke as well. I also put on an oranger based rub I use on fish quite abit as it goes well with Mojo.
I do these beer can style. I also put Mojo in the pan and plugged them up with Jalapenos. Lastly, I put the innards in the pan to smoke as they are a favorite for the dogs at dinner time.
I set the DigiQ for 325 using applewood and let her go. After getting through the danger zone, I backed it off to 300 degrees. Worked like a charm and was thrilled. After roughly 3 hours, the birds hit 175 and were foiled and into the cooler for an hour.
I pulled all the meat and seperated by white, dark and for the dogs.
Lastly, got a great pan full of broth which mingled in the Mojo during the smoke. That went into the fridge for seperation.
So, everyone was happy. The dogs got some good vittles, the Mrs. has vacum packed leftovers, and my new toy worked great.
