Here's a simple, easy dessert that I think would be good for summer BBQs / parties. I use the same cream filling that I use for my strawberries and cream pie. I buy the little frozen individual pie shells and bake them according to directions. Let them cool and then pour a little melted chocolate to cover the bottom and let chocolate harden. Mix the cream and fill pie crust and let sit overnight in the refrigerator.
Top with fruit of your choice. I like to use kiwi, strawberries and blueberries. Once topped, take a little apple jelly and melt it until smooth, then brush over the berries. There are lots of different "gels" you can make to do this but I like to use apply jelly. You will want to keep these chilled until you plan to serve.
Filling:
1 8-oz block cream cheese, softened
1/2 cup sugar
1/2 cup sour cream
1 tsp vanilla
1 tub Cool Whip (8 oz)
Beat the cream cheese, sugar, sour cream and vanilla until smooth. Fold in the Cool Whip.
The apple jelly gives them a nice, pretty glaze while helping to keep the fruit fresh.
Then add a small mint leaf for garnish.
Packed and ready for transport to work. March 30th is Doctor's Day so we had a little reception for our surgeons.
