The mother in law bought a lamb roast from Costco and asked me to cook it for Easter. I butterflied and stuffed it with garlic and seasoned it with salt, pepper, Greek seasoning and Herbs de Provence then let it rest over night in the fridge.
I decided to cook it on the kettle with some apple wood and a pan of beef broth and onions below it to catch the drippings and make sort of ah jus.
Butterflied and adding the garlic and seasonings.
All wrapped back up in it's netting and ready for a rest.
Into the kettle.
All done and pulled off at 140.
I planned to eat at 2 but the wife and mother in law changed plans and didn't tell me so it got wrapped and put in the cooler for about an hour so it wasn't nice and pink like I wanted it. If I would have known I would have pulled it out a around 132 internal temp. Oh well it was nice and juicy and everyone loved it. I forget to get a sliced picture.
I also made up some butter ranch mushrooms in the crock pot and OMG were they good.
