    Just comming out of the smoker



    Over night in the fridge getting ready to slice into chops and shave for sammys.

        Yes I have done this quite a few times, I watch for loins to come on special and buy a few, then brine, smoke, slice, vac pac and into the freezer for use all summer. They are great thawed and put on the grill to reheat. When I started I would slice the lions into chops then smoke them, but my wife likes me to smoke the loins first then slice. So I comprimised and now I smoke first then slice. LOL

            The sliced stuff will make some seriously good sammies ... I bet those chops aren't half bad either !! Really nice job on the loins!
