So i noticed most you pitmasters use the digital thermometer. My question is can i run the probe through the door.Or does this make a huge diffrence in the airflow.I dont want to cause any problems. Some of you run the probe through the smoke stack.Any input would be much appreciated.Thanks.

I use a Maverick ET 732 and run it through the door. I just recently used some adhesive backed felt to seal it up and left a small gap to run the wires through on the side where I normally run it, but didnt notice anything different with the temps or time of cooking. I know a lot of attention is paid to gaps in the door, but IMO, the air flow from the fan negates this issue.

I run mine through/under the door as well... I do not seem to have any issues... but it generally is toward the end of the cook.....

You will hear different answers on this. I will tell you that I have run mine under the door since I owned one of the first "Beta" YS640 test pits.

Never a problem. These cookers were never designed as a sealed unit.
Smoke it.. and they will come!

I've seen some guys who have drilled a hole for their probe, but I just put mine through the door as well.

I run my ET732 probes through the chimney to prevent smoke leakage through the lid. While it may not be a lot of smoke escaping, it does smoke up my thermal jacket and builds up more creosote around the lid where the smokes escapes requiring more cleanup... so mostly for a cleaner unit is why I run it through the chimney. Positive airflow is a good thing, although either way you go you will get awesome results on the YS640! My experience is that I get a more consistent thin blue smoke running through the chimney, in addition to running a small bead of high temp silicone around the edge of the lid to prevent smoke leakage. While the YS640 might not be designed to be a sealed unit, it seems to benefit from the positive airflow that creating a better seal on the lid provides. IMHO.

Whatever works for you is the right answer.

I would suggest you call the manufacturer and ask them the question...I know the answer, but you should hear it directly from the manufacturer.

Just a note... I was present at the Yoder factory during some testing. Probe wires were run out through the doors during the testing. This pit has a sliding baffle which when adjusted from right to left will have a far greater impact on air flow and temp balance then wires run out the door.

Wind blowing into the fan intake on the left side, will have greater impact on air flow and balance. And this doesn't pose much a problem.

Again, do what you like but running out the door is perfectly acceptable.

Call Don at Yoder (the owner)...his cell number is 316-304-6147...he welcomes your call and will answer your question about probes through the door, and any other question that you may have. He sent me a picture of the effects of running a single probe through the door during a large cook...converted me long ago.
