  • Tatonka jerky

    Been busy and this was done on a whim after seeing the bacon post so.....
    Pictures will be lacking.
    What I did was slice some meat by hand. Little over 2 lbs. Mixed together 3 T of Tatonka with 1 T of tenderquick. Sprinkle some on the bottom of the container, layer the meat, and add a fair amount of good quality honey. Then repeat the steps. After it was in the fridge for about 8 hours or so I mixed it all up real good and then 8 hours later, did the same again. I plan on hitting it with a few hours of cold smoke and then into the dehydrator. Just a small batch to see how it turns out so.......I'll let ya know :D



    This pick was after the first 8-10 hours right before I mixed it the first time.

          Yeah, I thought about it but the Tatonka dust has a fair bit of salt and I am using TQ as the cure so more salt. I figure the sweet will help with the curing and the salt so that's the route I went. We'll see. Think I'll need some cure #1 in the future as the Dust is fairly salty to me to begin with. Anyway, just something to try on a whim :)

            the Tatonka dust has a fair bit of salt and I am using TQ as the cure so more salt. I figure the sweet will help with the curing and the salt so that's the route I went.

                I gotta say man. It smells amazing! Had my wife and daughter both walk in at different times and say that the jerky smells fantastic! Can't wait to try some. It is in the dehydrator now. Only hit it with 2 hours of smoke due to time constraints. I usually do 4 hours...

                  Can't wait to see how this comes out. I'm thinking very good!
                  Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                  My best asset however is the inspiration from the members on this forum.

                      Yeah... there was another post..Oh..The Mossys did some bacon using TQ. If you just want like 10 Lbs/meat or so worth of cure 1, I'll send it to you to mess with free:{) I DO stock it as well as TQ..it's just not on my site.

                          Na, Father in Laws Annual B-Day get together. He likes to go to Laughlin and I drive him a couple times a year as he can't drive for that long.
