  • Some secrets just have to be told.

    I chose this category because the bread is homemade, of course.
    This is a variation of a sandwich that, as far I know is only made and served in the Eastern, NE to Central Iowa area. The story is that it was invented and served for the first time at an old restaurant in Omaha called Don and Millie's. Then it caught on all over Eastern Ne and Western IA, then a carhop called King's Host started selling them. Anyway, it's an artery clogging take on grilled cheese.
    Basically it's bread, cheese, and mayo, dipped in a pancake like batter, then coated in crushed corn flakes, then deep fried. It's a dish for those that like to have the kids help and making a huge mess in the kitchen is a must.
    We have made them with tune salad and cheese (what we had tonight) and ham and cheese. And it got me to thinking that sliced brisket might be good. If it gets done soon, it'll have to be one of you all that does it, because my smoker is in the shop until painted.
    So here is a pic of tonight's sandwiches. We had them with Cheeto's and fresh cauliflower and onion dip.



    I am on vacation all next week and plan on making some of the food that's distinctly Iowa/Nebraska. So stay tuned for some good, but not smoked stuff.

                    I swear I'm gonna run me over a coyote.

                    Batter:
                    1 Cup flour
                    1 egg
                    3/4 Cup milk
                    2 Tbs veg oil
                    I Tbs sugar
                    5 tsp baking powder
                    1/2 tsp salt

                    Dip sandwich in batter, coat well with crushed corn flakes, deep fry at 350° until browned and drain on paper towels.

                    And it is very adaptable to anything you can imagine. So is the coating. I coated some cauliflower tonight and fried it. It was good, but if I were gonna do a bunch, I'd season the corn flakes.

                              Forgot to mention, these are called Frenchee's. So this one would be a Tuna and Cheese Frenchee. Cheese and mayo would just be a Cheese Frenchee. Ham and cheese...........................you get the point.
