  • pork lau lau

    it's a hawaiian dish.

    cube up some butt meat & soak overnight in coconut milk
    sprinkle w/ hawaiian sea or kosker salt
    add whole pepper corns,bay leaf,& garlic
    wrap in wet taro or banana leaf
    put on smoker or off to the side of grill & cook for a couple hours.

    most authentic w/ keawe(kee-ah-vey),mango,or guava wood.
    brink vertical charcoal(the carp)
    18" old smokey charcoal grill/smoker
    cast iron Hibachi
    22" Kettle w/ "Smoke-EZ" styled riser extension
    & rotisserator
    12x7 wells cargo vending trailer(mods in progress)
    stuffer,slicer & more carp than i can fit in it...
    Marshall amps & various awesome guitars,drums,P.A.,etc.recording studio.....

    Looks good to me! Is that grilled pineapple on the left side of the grill?

      sounds interesting. hard to come by most that wood in your neck of the woods.

              got tons of mesquite around here. Ya, I guess you can get just about anything off the net today. Just some of this more not in the U.S. worrys me. as I think some of the money maker out there would send ya any kind of wood and tell ya it is what you wanted. if of course you did not know any better.
              in the canal zone we used a lot of mango for lu auws (spellin) burn it in a hole then put stuff in and cover for many hour..always yummy.

              your chow for today sounds fun.your restruant goers should find your new endevour afine eatry. with great tunes to boot.
