    I was up early ground 12# of venison chunks and 2# of pork fat, mixed with spice and cure then stuffed into 19 mm collagen casings they just went into my smoker. They should take about 6-8 hrs

          All done in the smoker



          in the fridge overnight to cool. I'll remove the strings and de-link them tomorrow.
