  • Smoked quial enchiladas

    Use to make these just cut up chicken breast but no longer can do that after this. This is how I grew up making enchiladas I am sure it may not even close to what a enchilada should be but I like. So here we go.

    We have, sour cream, 2 cans cream of chicken soup, can of chili's, chopped onion, red bell, and tomato's, tortellini's, refried beans and smoked quail I did yesterday.


    Mixed sour cream, cream of chicken soup and chili's.


    Get onions and red bell's soft


    Then throw in smoked quail and some home made taco seasoning to warm threw


    Throw all that and tomato's in the sauce and mix


    Spear refried beans on some of the filling that was just mixed up


    Into baking pan with some of the filling ontop with cheese


    Baked at 350 till melted

      Those look great!!

      Rich should be able to see those pics just fine... he is used to looking cross eyed at most of his pics...

        Interesting take on enchiladas & think I need to try it.... I like the idea of the cream of chicken soup in it, bet it turned oot pretty dang tasty.... Nice job & thanks for the recipe/ideas

          Looks great. I make a similar recipe using cream of chicken in our enchiladas.

            Yep. We're used to pics such as these. Rich has broken us in.
            All you need to do to see them properly is cross your eyes or drink heavily.
            Either will work.


            OBTW: Those enchiladas (as blurry as they are) look fantastic!!!

                Not sure I could go back to just making them with out smoking what ever it is I am using, weather it is chicken or quail they will have to be in the smoker first. Took a few birds over to the neighbors to make their own. They used their own recipe but said these were the best enchiladas they have ever made.
