A few folks were asking for the recipe for the awesome cake that Lena took to work for her co-workers to enjoy...Well here it is...with no pics...
Lena's Family Recipe Potato Cake with Chocolate Butter Frosting
2 cups sugar
2/3 cup butter
2 eggs, separated
1 cup mashed potatoes; you can use leftovers – salt, pepper and all
½ cup cocoa
1 cup flour
1 teaspoon cinnamon
1 cup milk
1 teaspoon soda, mixed in milk
1 cup nuts
1 teaspoon vanilla
Cream sugar and butter. Add lightly beaten egg yolks. Blend in potatoes. Combine cocoa with flour and cinnamon. Add alternately with milk. Add enough flour to make batter normally thick, (I always just use it all). Add nuts and fold in egg whites beaten stiff. Add vanilla and pour into greased and floured loaf pan, (I always use a 9 x 13 cake pan). Bake at 350 until toothpick comes out clean. I always look to see when it starts pulling away from the edge of the pan. I did finally time it in my oven and it took 45 minutes. Just remember that all ovens vary.
I don’t know if this was passed down to my mother, I suspect it was. I do know that it was my favorite birthday cake when I was growing up, then my mother passed it down to me and it quickly became the most requested birthday cake in our family. Enjoy!
Chocolate Butter Frosting
1/3 cup margarine or butter, softened – (I always use real butter)
2 ounces unsweetened melted chocolate – (cool)
2 cups powdered sugar
1 ½ teaspoons vanilla
About 2 tablespoons milk
Mix butter and chocolate. Stir in powdered sugar. Beat in vanilla and milk until frosting is of spreading consistency.
This is a really good cake...Everyone that tries it cant wait to have it again
