With some of my "other" projects out of the way for the moment I thought some Pastrami would be a nice change. Though most use beef, I thought a dual attempt would go nicely. I've found this recipe for Belly Pastrami that I think I'd like to take a crack at. I'll likely try a brisket flat as well at the same time and see which comes out better.
