Well, had a mixed bag today, with a couple of different forum items, so I'm going to put this in "Working With Flour".
Tonight, we celebrated our grandson getting his first "real" job. I won't go into past history except to say he is 21 and hasn't had one until now....what can I say about this game-playing generation.
First, I pulled a belly out of the fridge, after soaking for 2 days after a 12 hour smoke and sliced it up. It was a dry cure, then washed off and some applewood rub shaken on before smoking. It really tastes good and even my wife likes it and she is a tough critic. So that went into the fridge for our use.
After that, I used Zeus, my sourdough starter. to bake up some baguettes. Long, drawn out process of mixing, kneading, rising, rising, shaping, etc. I kind of screwed up and was adding small amounts of flour and water to get the dough right, but it turned out great.
Then I pulled some NY steaks out of the freezer (26 there from buying a large beef loin strip roast sometime in the past and slicing it into steaks). A little A-1 Rub shaken of before the grill made them great.
Combined the steaks and fresh bread with baked spuds and broccoli. A good time was had by all. Sorry, I missed a picture of the plating.
