  • Was asked to make some more of my Teriyaki Beef Jerky...

    So I made a 6 lb batch up using TQ for cure and then marinating it in the Teriyaki over night. It will get smoked tomorrow or Friday depending on whats going on...

    Did you mix the cure with liquid or rub it on and let it sit?? I made some the other day and just added my TQ to the marinade it seemed to have worked.. Or did I mess up? I dont wanna make anyone sick:P

    Oh and how about a recipe for this said jerky or is it classified?

      Mmmmm jerky

      Got to make some snackstix and jerky for snacking.

      Has to be healthier than chocolate and peanut butter :-)

        I let the TQ sit on both sides of the 1/4" sliced meat a few hours then set it in the marinade, I will turn it every 6 hours or so to make sure it is ok. More than likely I will smoke it tomorrow and it should be fine. It really doesn't last more than a couple days so I add the TQ just to be safe. We will be up at the Cabin next week and was asked to bring some...

        The recipe is a simple but good one, TQ for cure a Tbls per pound sprinkled on both sides. Let sit for a good while, then I layer it lattice style and add my Teriyaki to the mix and let it sit overnight or two. Then smoke it to your liking and texture. We like ours a little chewy so I don't let it completely dry out...

          What cut of meat are you using for this?

          And do you find it extra salty with both the salt in the TQ and the Teriyaki, or is it ok?

          thinking about doing this with some spicy teriyaki.

            The TQ- while helping as a preservative... is mainly for the process. Meat in the danger zone. You are not adding it to "just be safe". You are adding it because it is required.

                I find it very good, not salty at all. Using the Teriyaki I use, not sure about others...

                I usually use London Broil but this time I found Sirloin on sale so I used it. I think as long as you a lean cut of meat it should be OK.

                  Looks Good!

                  I use tender quick but mix it with a dry seasoning.

                  It's all sprinkled, wrapped and sits in the fridge for at least 24 hours, mostly 36 since I can't over cure it, but I can under cure it.

                  I'm just partial to the dry seasonings due to the heat level I like in jerky.

                    Got it into the Big Chief this morning... should be dome in about 6-8 hours...
                    Smoking with a mix of cherry and pecan pellets...

                            It was supposed to go up to the cabin with us in a week, don't think that's gona happen. Already had our daughter, son, Aunt, Mother in Law and a friend come by and "try it" in their words Daughter and son said it's the best I have made to date... everyone else, it was their first time tasting it and said it was awesome...
