  • Chunky Beef Stew

    I grabbed a twin pack of chuckie roasts from Sams yesterday and decided to smoke one of them and cut up and braise the other. After the meat was braised I decided to braise the baby potatoes and baby carrots to add some depth to the flavor.

    I brought a couple quarts of beef stock to simmer and got the briquettes going. I added the braised chuckie and stock to the DO and left it percolate for a few hours while the smoker did its thing with the other one.

    I pulled the smoked chuckie and cut it up and added it to the DO.

    Wait a couple hours.

    After a test of the tenderness, I added the potatoes and carrots and more stock to cover everything alone with a fresh round of charcoal.

    I waited for the charcoal to be almost used up before I pulled the solids from the DO. I left the liquid in the DO to thicken it. After the corn starch did its thing, I put it all back together for a final 30 min.

    I cleaned up the ashes and brought the DO in to cool a little. It looks pretty good. The smoke ring on the chunky chuckie looks good.



    It was a little bland, so I gave it a few tbsps of Rich's stuff and stirred it for a while. According to my dog, it's a winner! I kind of like it also. It's always better the next day or so, so it will be tomorrow's dinner.

        Thanks guys. It was a tad warm today. I believe the mercury reached 100° or very close to it. The Mrs thought it was great also, so I guess it was worth the work.

                  Mighty fine looking from here! I'd hit that in a second! I'd probably put half in a vacuum bag and freeze for the winter.... but that's just me!
