Cioppino (Seafood Chowder) - San Francisco Style

  • Cioppino (Seafood Chowder) - San Francisco Style

    INGREDIENTS:
    3/4 cup butter
    2 onions, chopped
    2 cloves garlic, minced
    1 bunch fresh parsley, chopped
    2 (14.5 ounce) cans stewed tomatoes
    2 (14.5 ounce) cans chicken broth
    2 bay leaves
    1 tablespoon dried basil
    1/2 teaspoon dried thyme
    1/2 teaspoon dried oregano
    1 cup water
    1 1/2 cups white wine
    1 1/2 pounds large shrimp - peeled and
    deveined
    1 1/2 pounds bay scallops
    18 small clams
    18 mussels, cleaned and debearded
    1 1/2 cups crabmeat
    1 1/2 pounds cod fillets, cubed (or halibut, or tilapia, etc)

    Note: I do not use salmon in my cioppino - stick to white fish and shell fish. Mix and match, don't worry if you're missing something. Add more if you can afford it. XLR8R

    DIRECTIONS:
    1. Over medium-low heat melt butter in a large stockpot, add onions, garlic and parsley. Cook slowly, stirring occasionally until onions are soft.
    2. Add tomatoes to the pot (break them into chunks as you add them). Add chicken broth, bay leaves, basil, thyme, oregano, water and wine. Mix well. Cover and simmer 30 minutes.
    3. Stir in the shrimp, scallops, clams, mussels and crabmeat. Stir in fish, if desired. Bring to boil. Lower heat, cover and simmer 5 to 7 minutes until clams open.

    Ladle soup into bowls and serve with warm, crusty bread. (Sourdough!)

    The broth itself freezes very well (no more than 3 months) and is actually better, like all soups the next day. Thaw out your broth and add your seafood - timesaver!

                Ya, bust out some pics, dude. My wife is from the San Fran area and has raved about the Cioppino cooks they do down by the wharf. Been wanting to try some. The recipe looks great, (I think)!

                  copied the recipe and i cant wait to try it.

                  i know that i will be inviting friends over 'cause no one else in the family eats seafood (i know living in coastal VA too) and it freezes well may be my saving grace

                        Sorry about that. I was dreaming of some Cioppino and wanted to share a recipe our family has been using since the 70's. It is absolutely killer as written. The depth of flavor is awesome, with some minor seasoning adjustments to taste. I'll be sure to post my pics on the next batch. Let's see yours.
