    Tri tip for sammies on the 4th...
    We are fortunate enough to have this particular cut of beef readily available out here in So Cal, it is a very quick smoke..

    Here they are... all nuded up..


    Then after they have been injected with a coffee/cocoa shot...


    Slathered with some Boscoe..


    Then the Java rub....


    They are on now, should not take to long...

      OF course! its a piece of cake really...
      here it goes...

      1/2 cup coffee grounds (I use the Cuban coffee, its stronger and ground finer)
      1/2 cup cocoa powder
      1/2 cup turbinado sugar
      1/2 cup kosher salt
      2 T cinnamon
      2 T Cayenne

      Mix together voilą! I hope you enjoy it!

        Man I love tri's they are a super fast smoke.
        These got away from me a tad took them off at 140* and I wanted to catch them at 135*.

        If you get the chance to smoke one of these, do try it, they are really yummy.

        Off and rested...


        sliced for sammies for Sat. I would have like it a little more rare as we are going to be re-heating them on Sat...
        I will make sure that Ryan, gives you all a complete taste report!

                    great looking tri's. I love those things. have not smoked one but have done a whole lot of them on the grill using a beer mops. they don'tlast long when they hit the cutting board.

                    and the juice's WD was talkin about. we have used hard bread ever since I can remember and sopped it up and ate.
                    we have always called the juice sop. excellent stuff it be..

                      Oh my my my Kelly..Those tris look so good I think I will eat my hand now!
                      I can say that Kelly's java rub is our house favorite. This rub goes hand in hand with beef as far as we are concerned. Pork and chicken hang out very well with the rub too. Man gotta love that!! Very nice.

                        i wonder what do you think if i do tea grounds instead of coffee..( not a coffee drinker )no coffee... i am a tea guy and import alot of flavor teas...hmm might have to experiment and post.....thanks for some ideas...
