  • Butt Not Thawing Fast Enough

    Pulled a 9 pound butt from the freezer Sunday, and moved it to the fridge. 4 days into it and it's mostly still frozen !! I've thawed 15 pound turkey's in the fridge in 2 to 3 days with no problem.

    Need to have this on the smoker by noon Saturday, should I put it in the sink and let water run over it ? Or give it another day ?

    It's sitting on the counter right now.

    I fully expect to read those same words from Rich this winter..

    If your in a hurry you can place it it cold water and help it thaw faster..

      Cold water all the way. I thaw everything in standing cold water, not even running. In FL, maybe throw some ice in the water. Once thawed, then into the fridge.

      I have never had a problem with food that way.

        X3 on cold water. Never done butts, butt pretty much everything else. I do change the water hourly or so

          Heh..we DO have heat and running water here in MI you know...

          Cold water..it'll be thawed by the AM.

            Thanks guys, into the water is goes. I think I have a big enough stock pot to put it in.

              Nothing wrong wrong with the sink and a stopper either. I always use the sink.

              The pot works if you want to keep the water running.

                Okay it's in the stock pot covered in water. Going to let it sit on the counter for a hour or so than into the fridge. Sound good ?

                  I would put it in water in something that will fit in the fridge. If it is still in plastic I would leave it in plastic. Maybe change the water every few hours.

                    My stock pot will fit in the garage fridge, will change out the water before bed time.

                      Technically, leaving it in standing water over night is not a good idea. I agree with Mark, in water in the fridge and change often or in the sink with cold water slowly running over it. That's what we do in culinary school and after taking the ServSafe course I don't think I will ever thaw anything other than in the fridge for however long it takes or cold water running over it. Just me two cents.

                        Good info for sure. My thinking is that since it's in the fridge in a stock pot full of water, the water will stay cold. If I change the water later on, wouldn't putting warmer water just raise the temp again ?

                        Damn I have a Serv Safe card from working at the bar, should have paid more attention.

                          Actually that makes sense. What about defrosting in the microwave? That works pretty well if you have a big enough microwave with a defrost setting.

                            Sooner or later someone had to bring up the microwave

                            Quite often I put large chunks of frozen meat into an empty ice chest...Monitor the temp with one of my thermos...Add ice when the temp gets above 34 degrees...Thawed and still cold in two days usually...Works for me...
